  • 1/2 tsp baking powder
  • 3 eggs
  • 2 tbsp of Fresh Orange Zest
  • ½ tsp of Fresh Lemon Juice
  • 200 ml black rum or brandy
  • 1/2 tsp ginger powder
  • 1 tsp cinnamon powder

 

Soak the fruits and nuts in the rum for 30 days. On the day of baking, mix all the dry ingredients and keep them aside. In a separate bowl, beat the sugar, butter and eggs into a mixture.
