Commi 2 job description 

They are mid-level chef and are equipped to assist senior chefs while at work. 

Skills required: 

  • Understanding of food safety and hygiene standards
  • Understanding and implementing HACCP principles
  • Maintaining high standards of kitchen hygiene

Qualification: 

  • Diploma in culinary arts
  • Subtle and foundational understanding of kitchen techniques 
  • Food safety certification (preferred)

They are responsible for -

  • Supporting commi 1 in complex tasks

Commi 3 job description

They are mid-level kitchen position chefs responsible for assisting senior chefs, helping them with complex cooking techniques whilst adhering to kitchen protocols & standards. 

Skills required: 

  • Basic kitchen techniques 
  • Knife skills
  • Food safety & hygiene
  • Communication skills 
  • Attentive to details 
  • Adaptable, patient, team player and ability to work under pressure 

Qualification: 

  • High school diploma
  • Culinary training certificate (preferred)
  • Work experience for a year as a Commis Chef 

They are responsible for - 

  • Food preparation including cutting, cleaning, slicing, pounding, steaming, stewing, sauteeing, deep-frying and baking
  • Preparing ingredients
  • Ensuring proper storage & temperature
  • Adhering to recipe guidelines and protocols
  • Kitchen maintenance - cleanliness, tidiness and hygiene 
  • Assisting in menu items, helping with stocks and managing deliveries
  • Assisting station chefs with necessary supplies
