Rajasthani Mirchi Vada for Monsoon Season

Mirchi vada is one of the oldest traditional snack of Rajasthan. No one knows exactly where it was originated, but it is certainly one of the best food of the state.

The snack is a life-saver for many people of Rajsthan. Jodhpur alone has over 1000 registered mirchi vada vendors. From being the soul source of income to also being one of the most affordable eats for the daily wage workers, mirchi vada plays a very important role in the Rajasthani community. Now let’s talk about what is Mirchi vada?

Rajasthan is famous for its spicy chillies, one of these is bhavnagri chillies which is commonly used to make mirchi vada. Mirchi vada is aloo-stuffed chillies, dipped in besan and fried to make a delicious spicy fritter, here is our recipe-

Ingredients-

  • Bhavnagri chilli - 5
  • Besan- 1 cup
  • Rice flour- ½ cup
  • Potatoes, boiled- 4
  • Ground coriander, cumin, haldi, red chilli powder, carom seeds, amchur, garam masala (Spices for potato)
  • Ginger-garlic paste- 1.5 tsp
  • Chopped green coriander
  • Chopped green chillies
  • Baking soda - pinch
  • Salt
  • Oil for frying

How to make Rajasthani Mirchi Vada-

  1. In a bowl, mix besan, rice flour, red chilli powder, amchur, salt, baking soda and water to form a coating density paste.
    Add a few lemon drops to it and let it sit. 
  2. Peel and mash the boiled potatoes. Heat mustard oil in a pan.
  3. Add the carom seeds, ginger-garlic paste, chopped green chillies & other spices.
  4. Once they cook, add the aloo and cook it over medium flame.
  5. Once the stuffing is ready, let it cool down. 
  6. Wash the big green chillies and make a big slit in the middle.
  7. Stuff the chillies with the aloo stuffing.
  8. In a deep and thick kadhai, heat vegetable oil.
  9. Coat the chillies with the besan batter and fry them for 3 to 4 minutes from all sides.
  10. Serve with sauce or garlic chutney!
