Aam Sondesh

Oh!! Bengali..hmmm.. Rasgulla.. Misti dhoi.. Sondesh...all these r the mostly common words whenever someone found out that I m a Bengali. Yes..Bengali’s love for sweet dish or mishti is well-known and an eternal love affair and Sondesh has a special place in our heart...in my heart,  specially this Mango Sondesh. As I am mad about mango..so almost in every Aam 'bala mousam' I m just ready to make it. Mango puree brings not only a delightful flavour to the regular sandesh but also it adds extra moistness to the sandesh. Mangoes were too sweet and that eliminates the use of sugar in the recipe, thus making this completely and naturally sugar free dessert. Mixed up the freshly made chena aka moist paneer with mango pure, powdered sugar and Cardamom pwdr, on flame cook the mixture by constantly strring, try to remove the moisture. Once the mixture turns dry i.e it should have a very soft, dough-like consistency. Turn off heat and remove it, now give your desired shape. Usually we used Terracotta Sondesh moulds for giving the shape but here I keep it in Aam shape..with mango gel filling.
