We all love pizzas. Old, young, middle-aged or teen-aged, pizza is an ever-uniting food. As much as we want to have pizza every day, our heart health certainly doesn’t allow it. But what if the pizza had everything healthy on top of it? Introducing our favourite fruit pizza recipe! With the goodness of fruits, this healthy fruit pizza can be your daily snacking option! Here is what you need-
Ingredients-
For Sugar and butter Cookie Crust-
- 1/2 cup (115g) unsalted butter, softened to room temperature
- 3/4 cup (150g) granulated sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 1 and 1/2 cups (188g) all-purpose flour (spoon & levelled)
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Topping-
- 224g full-fat cream cheese or Mascarpone Cheese, softened to room temperature
- 60g unsalted butter, softened to room temperature
- 240g confectioners’ sugar
- 1–2 Tablespoons (15-30ml) cream or milk
- 1 teaspoon pure vanilla extract
- assorted sliced fresh fruit
Method-
- To make a shortcrust cookie for fruit pizza, cream butter and sugar together until fluffy.
- Add egg, vanilla extract and whisk for 1 minute.
- In a bowl, sift flour, baking soda, salt and baking powder and mix thoroughly.
- Add it to the egg mixture and form a dough.
- Make a ½ inch circular sheet from the dough and bake at 190 degrees celsius for 18 to 20 minutes.
- For frosting, cream butter and sugar until fluffy. Add the cream and cheese and whisk till mixed.
- If frosting is too firm, add milk and vanilla and whisk again.
To Assemble the Fruit Pizza-
- Once the cookie is baked, let it cool down to below or at room temperature. (27 degrees C)
- Put the frosting over it and decorate it with sliced fruit as you like!

- 1 cup all-purpose flour 120g
- 1/2 tsp baking soda 3g
- 1/2 tsp salt 5g
- 1/2 cup unsalted butter room temperature, 113g
- 1/3 cup granulated sugar 65g
- 2/3 cup light-brown sugar 140g, packed
- 2 tsp pure vanilla extract 10mL
- 1 large egg
- 1 1/2 cups rolled oats 135g
- 1 cup semisweet chocolate chips 150g
Method -
- In a medium bowl, whisk together the flour and baking soda; set aside.
- Combine the butter with both sugars; beat on medium speed until light and fluffy.
- Reduce speed to low; add the salt, vanilla, and eggs. Beat until well mixed, about 1 minute.
- Add flour mixture; mix until almost combined.
- Stir in the oats and chocolate chips. Chill dough for one hour to overnight.
- Preheat oven to 180 degrees.
- Use a small ice cream scooper (two tablespoons) to Drop heaping tablespoon-size balls of dough about 2 inches apart on baking sheets lined with parchment paper.
- Bake until cookies are golden around the edges, but still soft in the centre, 8 to 10 minutes.
- Remove from oven, and let cool on baking sheet 1 to 2 minutes. Transfer to a wire rack, and let cool completely.
