Classic Lemon Loaf

Ingredients : 

Oil – 100ml; Vanilla – 1 tsp; Yoghurt – 100ml; Lemon juice – 2 tbsp; Milk - 80ml; Lemon zest – 1 tbsp; Castor sugar – 100gm(please adjust according to taste); Refined flour – 200gm; Baking powder – 1 tsp; Baking soda – ½ tsp; For glaze: lemon juice & honey - 3 tbsp(mixed in equal proportions); Milk powder -1 tbsp; 

 

Process: 

Sift all the dry ingredients together; Whisk Sugar and oil till sugar has dissolved completely; Then add yoghurt and milk and whisk well; Now mix in lemon juice and lemon zest; Finally fold in the dry ingredients in small batches using cut and fold method; Pour in a greased loaf pan and bake in a pre-heated oven at 180°C for 25 mins; Once the cake is cool, remove from the pan and smear the lemon and honey glaze; Dust milk powder on top for snowy effect.
