Kesari Phirni


This is a traditional saffron rice pudding which is served in India in festive season and as Holi is right here.. This is rich creamy and full of flavors and one can't stop having it. The dessert when served in clay pots, flavours enhanced and gives the authentic taste

Kesari phirni Ingredients: - 1 litre milk - 1 cup rice ( pre soaked for an hour and then coarsely ground with milk) - pinch of cardamom powder - 2 pinch saffron soaked in lukewarm milk - 5 tbsp condensed milk (@amul_india) - 4 tbsp sugar - garnishing ( pistachios, silver foil/chandi varq, kesar) Method: - Boil milk and reduce it till 3/4th quantity. - add ground rice and with help of whisk stir well and Cook on slow to Medium flame - After 5 mins add sugar and condensed milk and stir. - Add cardamom powder and saffron milk. Stir well using whisk and cook till rice is done and you get a good thick consistency. Switch off the flame and let it cool. As it cools down it becomes thick and may form lumps so stir it well Pour it in kasore(clay bowls which enhances taste and looks authentic) , garnish and refrigerate for 2 hrs before serving
