Lavang Latika

Being  a fitness enthusiast, I have a low affinity for sweets however Holi is one of the festivals that makes you binge on the tasty home made Indian mithais.. Lavang Latika is one of the favorites that we tend to enjoy in this festival of color - glazed in saffron and cardamom flavored sugar syrup, these bundles of happiness transport you to a world of joy.

Ingredients: For Dough: Refined Flour -1 cup Oil - 1 tbsp Salt - ¼ tsp Castor Sugar - 2 tbsp For Filling: Khoya/Mawa - 200 gms Sugar - 1 tbsp Grated Coconut - 4 tbsp Cardamom powder - 1 tsp Cloves - 8 no Oil / Ghee - For frying For Sugar Syrup: Sugar (for syrup) - 1 cup Saffron - 6 strands Green Cardamom - 3 to 4 Process: 1. Knead dough with oil, sugar and salt. 2. Rest the dough for half an hour. 3. While the dough rests, take grated khoya in a pan and cook over low heat till colour changes to golden brown. 4. Add sugar, toasted coconut and cardamom powder. 5. Keep aside and allow to cool. 6. In a heavy bottom pan take 1 cup of sugar and water each. 7. Boil over medium heat, add in saffron and green cardamom. 8. Cook till just starts to thicken. 9. Divide the dough into small ball. Roll the individual balls. 10. Fill in the khova mixture and fold the sheet into parcels sealing it with cloves. 11. Deep fry the parcels until cooked and golden brown in colour. 12. Dip them in the sugar syrup. 13. Serve at room temperature.
