Rajasthani Rabdi Ghevar
Similar to honeycomb this delicacy was originated in Rajasthan. It is one of the richest indian sweet, which is made with Desi Ghee and is either sweetened by soaking it in sugar syrup or is garnished with thick Rabdi , chopped dry fruits & Silver Leaf (chandi vark). Being a Rajasthani Iam familiar with its importance in our festivals or a wedding ceremony as ghevar is definitely a part of it! As per the customs and rituals, Ghevar is sent as a gift by parents of the married daughters as a blessing for her happy married life. Ghevar is a symbol of blessings and love showered by parents towards married daughters for the same. Ghevar is not just a sweet dish it is a perfect combination of art , technique and balance of flavour & it takes tons of practice to perfect one!
