Summer for India means the season of the King of Fruits. While in its raw version it gives us yummy pickles there are lots of other delicacies that we can whip up with mangoes … raw or ripe!

Summers are ardently awaited in tropical countries like India for the juicy, sweet and absolutely luscious mango harvest. With the country topping the global mango production there’s a plethora of varieties to take your pick from.

Don’t underestimate the benefits of this innocuous fruit as research claims that mangoes – lower cholesterol; control blood pressure; maintain the heart rate; are the perfect path to glowing skin; protect the cells from damage; improve eyesight; facilitate digestion; guard against heat stroke; energize your entire system; regulate blood flow et al

And besides eating them straight or as aam-ras there is a lot that you can do with mangoes…you can pickle them; make yummy chutneys and kachumbar; whip up sinfully delicious deserts; add them to salads, ice-creams, smoothies and curries.

Raw Mango Rasam

A Southern delicacy which goes by the traditional name ‘Mangai Rasam’ this comprises of tangy raw mangoes and tomatoes with nutritious arhar dal teamed with fiery spices and herbs like - ginger, garlic, red chilli, onion, black pepper, cumin seeds, mustard seeds, coriander seeds and turmeric powder - with salt and curry leaves.  This dish tastes good with rice and solo too!

Mango Rice

Tired of cooking…want to have something light? Then Mango Rice or 'Mangai Sadam' is the perfect dish for you! Most of the ingredients are available in the kitchen pantry – rice, oil, mustard seeds, chana dal; urad dal; peanuts; curry leaves; dried red chillies; freshly grated or crushed ginger; green chillies; turmeric powder; asafoetida; raw mango; fresh or desiccated coconut; and salt 

Serve with papad or chips; or rasam or curd or just pack it in your child’s tiffin box and sit back and revel in the accolades you get for this crunchy and tangy dish!

Mango is perhaps the only fruit which in its raw and ripe form can form all parts of an Indian meal – curry, rice, desert and hey… there’s chutney too! This spicy and tangy dip is a good summer coolant and can be prepared in a jiffy with basic ingredients like – raw mango, fresh or desiccated coconut, green chillies, garlic cloves and salt. 

The best part is that this chutney has a long shelf life so long as it’s stored in an airtight container.
