Tropical Panna Cotta

Fruit and Dessert is a match made in heaven. What better than combining the two - sweet cravings and health, a big tick to both the essentials of a joyous life. So, sharing one of our family's summer favorite "Tropical Pannacotta with the goodness of lychee, coconut, mango chunks and cardamom pods.

Ingredients: Fresh lychees(de-seeded & blended)- 600gm; Thick coconut milk - 300ml; Green cardamom pods -5 to 6; Cream - 200ml; Castor Sugar - 2 tbsp; Gelatin - 2 tbsp; Mango - 1; Process: 1. Simmer the blended lychees on low heat along with the thick coconut milk, few cardamom pods and cream for around 8 to 10 mins. 2. Add sugar into the simmering mixture. Please adjust according to your taste. 3. Then add the powdered gelatin, which had been soaked in warm water, to the fruit mixture. 4. Pour them in moulds and leave them in room temperature to cool. 5. Now refrigerate for 2-3 hrs till set. 6. Add mango chunks for garnish and serve cold.
