Ingredients

  • 1.5 cups wheat flour
  • 1 tsp baking powder
  • 1 tbsp lemon zest
  • 1 pinch salt
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • Vanilla extract
  • 2 tbsp lemon juice
  • 1/2 cup buttermilk

Instructions

  • Combine 1.5cups wheat flour, 1.5tsp baking powder, 1tbsp lemon zest and salt.Keep aside
  • Also, cream 1/2cup butter and 1cup sugar(I’ve used rock sugar candy here)together until pale and fluffy
  • Add two eggs- one at a time, then beat in the vanilla extract and 2tbsp lemon juice. Beat until combined.
  • Add about one-third of the flour mixture and mix, then add half of 1/2cup buttermilk and mix until just combined. Repeat with another third of flour mixture and then another half of buttermilk.End with the last third of the flour. Beat until just incorporated.
  • Scrape the batter into the pan and bake for 45-55 minutes at 175degrees or until the cake is golden brown and a toothpick comes out mostly clean.Baking times vary, so keep an eye on yours.
  • Let the cake cool for around 15 minutes in the pan.Mix 2tbsp lemon juice and powdered sugar to make the lemon syrup.Brush the syrup on the cake while it’s still warm
  • To prepare the glaze,mix 1tbsp powdered sugar(rock candy sugar) with 1tsp milk.Increase the quantity in this ratio as per your need. Pour it over cake and let dry before serving.
  • Garnish with mint sprig and a slice of lemon.
