Ingredients

  • Amla/ Indian gooseberry, diced
  • brown sugar/ jaggery
  • cinnamon , cloves
  • Whole red chilli
  • Cumin seeds
  • Turmeric power
  • Red chilli powder
  • Oil
  • Water and salt

Instructions

  • Boil the diced Amla pieces in a pan till they are softened (almost cooked). Keep them aside for cooling.
  • Heat the oil in a pan and add the cumin seeds. When they crackle, add the cinnamon pieces, whole red chilli and cloves simultaneously.
  • Now add the brown sugar/ jaggery and excess water left of the boiled Amla.
  • Let the sugar be dissolved on medium flame. Stir occasionally. When dissolved add the boiled amla pieces and mix well.
  • Let the flame be on sim. Now add the red chilli powder, turmeric powder and salt.
  • Mix well and let it cool to room temperature. Store refrigerated and serve with any indian bread and dal or sabji.

Notes/Tips

This being rich in calcium, iron and a natural immunity booster, I try to stock not only in winters but summers too. This pickle with the additional benefits of jaggery can be served with any indian bread and dal or sabji
