Ingredients

  • 4 Alphonso or any other ripe mango variety
  • 1 cup Homemade malai or fresh cream
  • as per taste Sugar or honey
  • 1/2 tsp Salt
  • 1 tsp Cardamom powder
  • 4-5 Kesar threads mixed in 1 spoonful of warm milk

Instructions

  • First, wash and clean the dirt from the mango surface. Then massage them by rolling gently on kitchen counter. They will become soft. Chill them for 20 minutes and then take out. Remove the top eye of each mango and squeeze out the pulp and seeds in a bowl.
  • With the help of a spoon, remove flesh from seeds. Then discard the seeds. Combine the cream/malai, sugar or honey, cardamom powder and blend in mixer or by hand blender.
  • Finally, add saffron and salt and mix well. Aamras is ready. Serve chilled as a delicious dessert or with puri, rice papad and kadhi. Enjoy!
