This is Date palm Jaggery and whole wheat flour halwa which is a winter staple and my favourite. Date palm Jaggery is a very healthy jaggery which is found in Bengal and loved by all. It has too many health benefits for example it is rich source of minerals and nutrients. It's an energy booster and helps in digestion. Jaggery is also low in glycemic index and better than cane sugar. It's said a little jaggery after meal helps in digestion.

Ingredients

  • Whole wheat flour 1 cup
  • Ghee 2 tbsp
  • Date Palm Jaggery 1/2 cup
  • Warm water 1-1/2 cup

Instructions

  • Heat ghee in a pan. Add flour and roast it on low flame till its colour changes little.
  • In another vessel, melt jaggery in water. We only have to melt the gur and not make get to any strings consistency.
  • Meanwhile, stir the flour and roast till you get a bhuna aatta aroma and the colour of the flour has also changed to a light brown colour.
  • Add the jaggery water in it and stir continuously. Now on high flame, stir, breaking lumps, if any and cook till the water evaporates and it leaves the ghee on the sides.
  • Serve hot.

Notes/Tips

1) I do not like any elaichi or chopped nuts which can be added anytime as per liking. 2) Slowly add the jaggery water on low flame as both the flour and water is hot. The hot vapour might burn your hand. Be cautious. 3) You can use the normal jaggery also, but strain it before adding to the flour.
