  • 1.5 cups Maida
  • 3 tbsp Hot Ghee
  • 1 tsp Salt
  • 1 glass Warm Water
  • 2 drops Green food Color
  • 3 tbsp Acharmasala
  • 1 tbsp Aamchoor powder
  • 2 tbsp Oil
  • Oil for frying

Instructions

  • Put 1 cup Maida, 1/2 tsp salt, 2 tbsp ghee in a bowl and mix everything well, take water as required and make a hard dough like paratha.
  • Now, put 1/2 cup Maida, 1/4 tsp salt, 1 tbsp ghee, 2 drops green food color in a bowl, mix everything well, take water as required and make a hard dough like paratha. Now, cover both the doughs with a wet cotton cloth for the next 15 mins.
  • Then, mix 1 tbsp of aamchoor powder in 3 tbsp of achar masala and keep it ready.
  • Now, make 6 equal loaves from white dough and 3 loaves from green dough and make thick round roti type layers of all. Now put oil on the white layer and sprinkle maida and acharmasala on it.
  • Then, place the green layer on the white layer, oil it and sprinkle the maida and acharmasala. Now, again arrange a white layer on it and also put oil on it and sprinkle the maida as well as the acharmasla.
  • Now, slowly make the roll so and make sure that there should be no space between the all three layers. Now, cut the roll into the equal pieces and press into full shape by pressing it vertically by hand and wave it in the small round shape.
  • Then, Take the oil as needed in a pan, heat over low flame and fry until both sides are crispy.
  • Delicious Achari Mathri is ready.. Serve for with Tea or coffee.
