  • Oil
  • Cumin
  • Mustard
  • Onion
  • Curry leaves
  • Potato
  • Salt
  • Turmeric
  • Green chillies
  • Lemon
  • Peanuts
  • Coriander

Instructions

  • Wash the poha in a colander. Let the water drain out and set poha aside for at least 7-10 minutes. Add turmeric powder, and salt. Mix well. Heat 3 tablespoons of oil in nonstick pan. Add 1/4 cup peanuts and fry them on medium heat. Remove from the pan and set them aside. Add the cumin seeds, mustard seeds to the same pan. When the start to splutter, add the curry leaves and sauté for few seconds. Add the diced potatoes and mix well. Cook for 2 minutes. Cover the pan with the lid and cook on medium heat for 5-8 minutes. Stir occasionally. Add the onions, chopped green chilies, and sauté on medium heat for 2-3 minutes. Add soaked poha to the pan and stir well until combined. Cook on medium heat for 4 to 5 minutes, while stirring continuously. After that, add 1 teaspoon of lemon juice and mix well. Remove from heat, and Garnish with fried peanuts, finely chopped coriander leaves, and chopped onions. Serve hot aloo poha.
