- In a blender ginger garlic,saunf, Coconut blend well. Heat oil in a pressure cooker , add the spices, followed by sliced onion and curry leaves. Add the blended paste and mint leaves. Once the raw aroma disappears. Add the tomato, turmeric and chilli powder. Cook until they become soft and mushy. Add the bottle gourd and saute lightly. Add the rice and boiling water close the lid ,when steam comes out put the whistle and keep it in a very low flame for 10 minutes Once cooked,Garnish with the chopped coriander leaves.
