Apple Hand Pies with Jaggery

Ingredients

  • 2 Medium Apples
  • 1/4 cup Jaggery Powder
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter for filling
  • 1/4 tsp all-spice powder (clove+nutmeg+pepper)
  • 1 cup All-purpose Flour
  • 45g unsalted butter, chilled and cubed
  • 1/4 cup ice water
  • 1/2 tsp salt

Instructions

  • Peel the apples and dice into bite-sized pieces. Combine 2tbsp butter, jaggery, cinnamon and allspice on medium heat and simmer for 2 mins until everything comes together and apples are a bit softer with occasional stirring. Cool the mixture until room temperature.
  • Mix the flour, salt, butter and ice water 1tbsp at a time and keep mixing with a spoon until it forms a dough ball. The ball should not be sticky but just formed together. Flatten into 1 inch thick sheet and refrigerate for 2 hours. After taking out, roll out into 1/8-1/4inch thick circular discs.
  • Place discs on baking trays, fill the center with apple mixture, place another dough disc on the top. Press along the edge of the disc to seal and crimp with a fork. Freeze these for another 10minutes until you preheat your microwave at 190degC.
