  • Large Apples (of a sweeter variety)
  • Ghee
  • Full Fat Milk
  • Nestle Milkmaid
  • Green Cardamom Powder
  • Sliced Almonds
  • Garnish - Apple slices and sliced almonds

Instructions

  • Choose a sweeter variety of apples such as Gala, or Fuji, or Red Delicious. Peel and grate the two large apples just before you begin the cooking steps. This way, they won't turn brown.
  • Heat 2 tablespoons of ghee in a pan over a medium flame and add the grated apple to it.
  • Stir and cook until the apple juice evaporates and the grated apple turns semi-dry. Turn off the flame. Let this nice-looking cooked apple cool to room temperature.
  • Unlike traditional kheer recipes, we'll add cooked apple into prepared milk (at room temperature) in the final stage. This way, the cooled milk won't curdle due to the acidic content of apples.
  • Pour milk into a vessel and bring it to a boil on a medium flame.
  • Now, cook the milk on a reduced flame until it reduces to nearly three-fourth of its original quantity. Notice the milk thickening a bit. Stir frequently to prevent sticking.
  • Add 5 tablespoons of Nestle Milkmaid to the milk. Now, increase the flame to medium, stirring continuously for 5-7 minutes.
  • Taste the milk-condensed milk mixture for sweetness. If you want it sweeter, depending on your requirement, add a half or 1 tablespoon of Nestle Milkmaid. Mix well.
  • Now add sliced almonds and green cardamom powder. Mix well and cook the mixture for a minute before turning off the flame.
  • Transfer the prepared milk to the serving bowl. Let it cool to room temperature.
  • Now add the cooked apple into the prepared milk and mix well. Our delicious, healthy, and wholesome Apple Kheer is ready. What's more, it even has the excellent aromatic flavour of cardamom.
  • How about having this nutritious kheer as dessert after dinner? Keep it in the fridge for about 3 hours before serving. Chilled apple kheer tastes even yummier!
  • Before serving, garnish the apple kheer with few sliced almonds and the dessert bowls with apple slices.

Notes/Tips

1) As already mentioned in the recipe, go for a sweeter variety of apples - Gala/Fuji/Red Delicious 2) As already mentioned in the recipe, never add apple to warm or hot milk. This way, you prevent the curdling of milk.
