Aubergine Spinach

Ingredients

  • 1. Aubergine - 1
  • 2. Spinach - 1 bunch
  • 3. Potatoes - 2
  • 4. Dry red chilli - 1
  • 5. Nigella seeds - ½ tsp
  • 6. Turmeric powder - ½ tsp
  • 7. Green chillies - 2
  • 8. Mustard Oil for cooking
  • 9. Salt to taste

Instructions

  • Wash the spinach. Chop them and keep aside.
  • Cut the aubergine into pieces and soak them in water. Also cut potatoes into small pieces.
  • Heat oil in a pan and fry the diced potatoes and aubergine separately and keep aside.
  • In the same oil temper dry chilli and nigella seeds. Add the chopped spinach.
  • Stir with turmeric powder and salt. Cover for few minutes.
  • Then add fried potato and aubergine pieces. Stir and cover it for 5 more minutes.
  • Add slitted green chillies. Let the water evaporates completely.
  • Aubergine spinach is ready to be served.

Notes/Tips

1. Soak the aubergine pieces in water or otherwise it will turn black. 2. Let the water from the spinach evaporates completely.
