- Wash the spinach. Chop them and keep aside.
- Cut the aubergine into pieces and soak them in water. Also cut potatoes into small pieces.
- Heat oil in a pan and fry the diced potatoes and aubergine separately and keep aside.
- In the same oil temper dry chilli and nigella seeds. Add the chopped spinach.
- Stir with turmeric powder and salt. Cover for few minutes.
- Then add fried potato and aubergine pieces. Stir and cover it for 5 more minutes.
- Add slitted green chillies. Let the water evaporates completely.
- Aubergine spinach is ready to be served.
