- Soak all the ingredients except the salt and baking soda for 8 hours.
- Grind the rice and pulses into to a fine batter
- Leave the batter to rest overnight and Ferment
- Once the the the batter is fermented add salt and give a good mix.
- If you are in a cold region add baking soda at this time
- If you are in warm region and your batter is well fermented. You can skip adding baking soda.
- Make the idlis using the idli steamer for approxx 20 minutes.
- Enjoy with your favorite chutneys
