- In a pan, heat some Oil and add the Mustard Seeds at first followed by the Ginger garlic paste. Saute it for a few seconds and then add in the Asafoetida and the chopped or slit Green Chillies as well. Add in the powdered spices too. Followed by the chopped Dill or Soya Leaves and finally the chopped Onions. Mix well and cook on low heat with a lid on.
- Do not add water. Saute all of that on a low heat until done. The raw smell should be gone. Now add the Baby Potatoes either halved or whole. Mix well. Cover and cook on a low heat for 15-18 minutes or a little more if required. The Potatoes can be deep fried or boiled if the cooking time needs to be reduced.
- Adjust Salt and garnish with some more of Coriander. Serve hot alongside Rotis or any Indian Bread like Puris, Parathas etc. Yum!
