Ingredients

  • Oil 1/4 cup
  • Hing 1/4 tsp
  • Green garlic 1/4 cup
  • Spring onion white part 1 cup
  • Onion 1
  • Ginger Chilli paste 2 tbsp
  • Salt to taste
  • Coriander cumin powder 1 tsp
  • Turmeric powder 1/4 tsp
  • Garm masala 1 tsp
  • Tomato 1 cup
  • Lemon juice 1
  • Spring onion green part 1 cup
  • Fresh coriander 1/2 cup
  • Big brinjal 3

Instructions

  • Apply the oil on the brinjal and roast it on the flame. Cool it completely and remove the skin of it and make a pulp from it.
  • Now heat the oil in pan add green garlic, spring onion (white), onion and cook it completely
  • Now add tomatoes and all dry masala in it and cook till oil is released.
  • Now add brinjal pulp and spring onion green part and cook it well. At last add lemon juice and mix it.

Notes/Tips

Red baingan ka bartha can be made by using regular ingredients instead of fresh and green vegetables.
