- Wash and slice the potatoes into wedges. Soak them in hot water for 30 minutes. Drain the water and add potatoes in a large bowl. Add all ingredients. Mix nicely with hands until the wedges are coated nicely. Take a baking tray lined with parchment paper to avoid sticking. Arrange the wedges. Bake in a preheated oven at 200-210 deg. For 30 -35 minutes,turning them halfway through. Sprinkle with some parsley or coriander leaves and serve immediately.
