Ingredients

  • 2 cups maida
  • 1/2 cup ghee
  • 1 tsp powdered sugar
  • Pinch of salt
  • 1/4 tsp baking soda , 1/2 tsp baking powder
  • 1/2 cup oil , 1/2 cup water
  • 2 cups sugar
  • Ghee for frying

Instructions

  • Add maida and warm ghee and mix them. Add oil, water, baking powder, baking soda, salt, powder sugar and warm water. mix gently. Keep it for ten minutes.
  • Add sugar with 1/4 cup water. Add few saffron and mix. Stir until the syrup become slightly thick. Few seconds before one string consistency. Switch off
  • Spread the dough in a plate cut into two pieces. Place one piece above the other again cut it into four pieces. Place one above other again cut it into eight pieces. Again join all the pieces and cut it again. Do it often as you can so the balu shahi will very soft and fluffy
  • Take a small ball size dough make small thick round shape and make dent in the centre
  • Heat oil and drop the balushahi slowly. Stir occasionally. Fry into golden and crispy Soak the balushahi in the sugar syrup , dip both sides. Soak for ten minutes. Juicy fluffy balushahi is ready

Notes/Tips

Be careful while making the sugar syrup. Should be of the exact consistency
