Ingredients

  • Banana 1
  • Rice 1 cup
  • Grated Jaggery 3/4 cup
  • Grated fresh coconut / dessicated coconut 1/4cup
  • Milk 1 cup
  • Cardamom powder 1 tsp
  • Ghee 1/4 cup
  • Salt pinch
  • sesame seeds 1/4 tsp
  • Baking soda 1/4 tsp

Instructions

  • Soak the rice for four hours. Wash and grind with banana into slightly coarse batter. Add jaggery in a pan with 3 tbs water. The jaggey syrup consistency is slightly thick. Add this syrup to the rice batter. Heat one tsp ghee and fry the coconut into golden colour.
  • Add this fried coconut , cardamom powder, sesame seeds ,salt and baking soda to the rice jaggery batter. If you ferment for overnight skip the baking soda. Mix well. Thick flowing batter consistency
  • Heat the appe pan. Pour two tsp ghee in each mould of the appe pan. Then pour the appam batter and cover the pan. Let them cook for three minutes on medium flame.
  • After three minutes apply little ghee on the surface of the appam. Appam puffed well. Gently flip it when the appams have turned golden brown colour. Keep the flame medium.
  • Cover again and cook for two more minutes. Now both sides into golden colour.
