Ingredients

  • 2 litres full fat Milk
  • 3-4 medium sized Beetroots pureed
  • 1 cup Sugar
  • 2-3 crushed Cardamoms
  • 100 gm Basmati Rice
  • 1/4 cup chopped Almonds
  • 1/4 cup Malai or Milk Cream

Instructions

  • Wash Basmati Rice, soak it in enough water for an hour. Rinse and leave it to dry. After it dries, powder it and keep aside. Do not let it dry fully. It should be semi dried. It's okay if it is not a fine powder.
  • Boil milk and allow it to simmer on a low heat until it reduces to 3/4th of it's original volume. Add the Beetroot puree and cook until done. Along with it, also add the powdered Rice, Cardamom powder, Sugar and Fresh Cream. Do not add any artificial colour to the Kheer. The whole charm of it goes away.
  • Stir it briskly and adjust the consistency to your liking. Switch off the heat and garnish with Almonds. Serve it cold or warm as desired. No need as we are using the readymade. Enjoy!
