Yesterday I got beetroot from Vegetable market but my daughter said mom I am bored with beetroot salad and beetroot paratha so prepare something interesting and guess what I made this delicious sweet dish with a super healthy.....

Ingredients

  • 1 cup grated beetroot
  • 2 cup grated carrot
  • 1 cup sugar or to taste
  • 1 cup coconut powder
  • 2 -4 tsp ghee or as required
  • 3-4tsp chopped dry fruits
  • 1/2 tsp cardamom powder
  • Whole cashewnuts (kaju) for garnishing

Instructions

  • Put pan and heat then add ghee and grated beetroot And grated carrot roast it for 10-15 minutes on medium flame.
  • Put another pan on the gas and add coconut powder then roast it for 5-7 minutes then take it out.
  • Put pan on the gas and add dry nuts then roast it for 5-7 minutes the take it out. Grind it in grinder to make it
  • Take one bowl water in a pan and heat it. When water starts boiling, put sugar in it and mix it continuously till it becomes ek taar (onewire) chaashni.
  • How do you see ektaar chashni- take the chashni between thumb and first finger and enlarge it. If it becomes like one wire, then it is called ektaar chashni. ( Sugar syrup)
  • Mix beetroot carrot mix coconut powder and drynut powder in sugar syrup and mix it properly on medium flame for 2-3 minutes then put off gas.
  • Grease the tray with ghee then spread beetroot carrot mixture evenly then kept in fridge for 2 hours to set it.
  • Take it out from fridge and cut into heart pieces and garnish with chopped almonds,cashew nuts.

Notes/Tips

This Healthy Beetroot carrot deligh is Gluten Free and Raw. It’s perfect for a sweet treat without the refined sugar – or then add jaggery powder
