Ingredients

  • Besan 100gm
  • Yellow food color
  • Baking Soda 1 pinch
  • Water (as needed)
  • Milk 500ml
  • Khoya 100gm
  • Sugar 150gm
  • Green Cardamom 2-3
  • Ghee/Oil (for frying the boondi)
  • Dry fruits/Flower (for garnishing)

Instructions

  • Mix besan, yellow edible color and soda.
  • Add water as required and prepare a batter for frying the boondi.
  • Pour the batter into the hot oil through holed laddle. Fry the boondis on medium heat for 1 min. Put the boondis aside
  • In another deep bottom vessel pour the milk. Let it heat up then add the khoya. Bring it to boil. Let it boil until it thickens.
  • Add the sugar and crushed cardomom. Keep stirring.
  • Once the milk has thickened, bring it down from heat and let it cool.
  • Add the boondis. Keep it covered for 1-2 min.
  • Garnish with dry fruits or flowers and serve.

Notes/Tips

Drop the batter in hot oil but fry in medium heat. Do not fry for long. Do not add salt in the besan batter. Do not add the boondis to hot milk.
