An easy and simple indian sweet recipe made with deep-fried chickpea flour pearls dipped in sugar syrup. it is an ideal dessert recipe which is not only made and served for festival but can also be served as a light dinner snack. the same recipe is further extended to make boondi ladoo by shaping it to like a ball.

  • 1 cup besan / gram flour
  • ¼ tsp baking soda
  • oil (for frying)
  • 1½ cup sugar
  • 2 pods cardamom

Instructions

  • 1. firstly, to prepare sugar syrup, in a large kadai take 1½ cup sugar, 2 pods cardamom and 1½ cup water. 2. stir and mix well until the sugar melts. 3. now boil for 5 minutes or until the sugar syrup until it turns slightly sticky. 4. add ¼ tsp saffron food colour and mix well. keep aside. 5. to prepare boondi, in a large bowl take 1 cup besan and ¼ tsp saffron food colour. mix well. 6. now add ¾ cup water in batches. 7. mix well and beat for 5 minutes forming a smooth flowing consistency batter. 8. now add ¼ tsp baking soda and mix well. 9. to prepare boondi, pour the batter slowly over skimmer or grater, keeping the oil hot. 10. stir occasionally, until the boondi turns golden and crisp. 11. collect all the boondi and make sure to drain off the oil completely. 12. transfer the boondi into warm sugar syrup and dip completely. 13. cover and rest for 1 hour or overnight depending on sweetness you prefer. 14. drain off over colander to remove excess sugar syrup. 15. finally, meethi boondi or boodi sweet is ready to enjoy.

Notes/Tips

Make sure to check the consistency of the batter to get perfect pearl-like boondi.
