- Peel and cut lau into very small pieces Salt them and keep aside. Peel shrimp, wash thoroughly, rub salt and turmeric and keep aside. Heat oil in a pan. Add cumin seeds, whole dry red chili, and a bay leaf. Let it splutter. Add shrimp and stir for couple of minutes. Now add lau and stir well. Put a cover on and let it cook on low flame. Take the cover off occasionally and stir. The lau will soften gradually. Add turmeric powder, red chilli powder, cumin powder, coriander powder. Stir and cover. At this point if you don’t see enough water released from lau then add ¼ cup of water. Keep the lau covered. Let it be cooked fully. Adjust salt and take it off the heat. Serve with rice.
