Brinjal chutny

Ingredients

  • Brinjal (Big in size and slight yellow in colour)
  • Green chillies - 5
  • Curry leaves
  • Coriander leaves
  • Refined oil - 2tsp
  • Mustard seeds - 1tsp
  • Jeera seeds - 1tsp
  • Turmeric powder - 1tsp
  • Hing - 1tsp
  • Udad daal - 1tsp
  • Channa daal - 1tsp
  • Salt as required

Instructions

  • Chop brinjal and chillies into small pieces.
  • Take a vessel, add oil to it.
  • Add mustard and jeera seeds, turmeric powder, Hing, udad daal, channa daal 1tsp each to tadka.
  • Add curry leaves and chillies followed by chopped brinjal.
  • Add salt as required and saute.
  • As it becomes soft, season it with Chopped Coriander leaves.
  • As it cools down transfer it to the jar and Grind it into fine paste. Delicious Brinjal chutny is ready!

Notes/Tips

Keep the chopped brinjal in water to prevent from turning black. You can also add tadka at last to make it more delicious.
