- Chop brinjal and chillies into small pieces.
- Take a vessel, add oil to it.
- Add mustard and jeera seeds, turmeric powder, Hing, udad daal, channa daal 1tsp each to tadka.
- Add curry leaves and chillies followed by chopped brinjal.
- Add salt as required and saute.
- As it becomes soft, season it with Chopped Coriander leaves.
- As it cools down transfer it to the jar and Grind it into fine paste. Delicious Brinjal chutny is ready!
