- Heat oil in a pan add onions, salt, saute it for 2 minutes. Then add ginger garlic paste, turmeric powder, chopped tomatoes, grated coconut, chili powder, coriander powder, and let it cook with closed lid for 2 minutes then let it cool down. Later transfer it into the blender and make a fine paste. Heat oil in a pan, add mustard seeds, fenugreek seeds, red chilies, urad dal, curry leaves, saute it. To it even add the prepard paste of onion, tomato and coconut, potato mix this and let it cook with closed lid for 5 to 6 minutes. In the same pan, add tamarind juice, water, mix it. Add jaggery to the same pan, once it comes to boil. Add chopped brinjal, salt, mix it well and cook this for few minutes, then switch off the flame.
