Ingredients

  • For Mexican Fried Rice
  • Cooked rice
  • Sliced onion
  • Sliced capsicum
  • Finely chopped tomatoes
  • Mixed vegetables boiled sweet corn, carrots, bea
  • Chilii, ginger, garlic paste
  • Oil
  • Salt as per taste
  • For Fried Beans:
  • Boiled Rajma
  • Chopped tomatoes
  • Chopped onion
  • Green chilli
  • Garlic chopped
  • Finely chopped onion
  • Cumin seed powder
  • Chilli powder
  • Salt as per taste
  • Sugar (optional)
  • For Uncooked salsa sauce:
  • Chopped tomatoes
  • Chopped onion
  • Green onion
  • Garlic
  • Jalapeños chopped
  • Salt as per taste
  • For Garnishing:
  • Grated cheese
  • Nachos
  • Sour cream

Instructions

  • For Mexican Fried Rice: 1. Heat oil in a non stick pan,  add chopped onion and saute for 2 minutes. 2. Add chilli garlic,  ginger paste and chopped tomatoes,  capsicum and saute for 2 minutes.
  • 3. Add mix vegetables to it and saute for 2 minutes by adding little water to cook it.  Stir it occasionally. 4. Add rice and salt to it mix well. Cook it for 3 minutes . 5. Keep aside our Mexican Fried Rice .
  • For Mexican Fried Beans: 1.Soak Rajma in a deep bowl for overnight and drain well on next day. 2. Combine Rajma,  tomatoes,  chopped onion, green chili, garlic, salt. Cook in pressure cooker using water . Whistle pressure cooker for 5 to 6 Whistle.
  • 3. Heat the non-stick pan and add oil in it,add chopped onion to it and saute for 3 minutes. 4. Add Rajma mixture to it, add salt sugar , cumin seed p, chili powder, and butter to it and mix it well. Cook for 3 minutes. 5. Our Fried beans are ready.
  • For uncooked salsa sauce: Mix all ingredients of salsa sauce and chopped it roughly.
  • How to proceed: Make 4 equal portion of Mexican Fried Rice and Fried Beans. Before serving take a glass serving bowl.
  • 1st make a layer of Fried beans . Then make a thin layer of sour cream. Now make a layer of aFriedcRice in layer of sour cream. Now make a layer of grated cheese.
  • Repeat the all layers in a same bowl. Finally make a top layer with grated cheese.

Notes/Tips

For Garnishing: When our bowl is readyby making different layers of Rice, beans, souer cream and cheese, arrange NACHOS IN A HALF CIRCUMFERENCE OF A BOWL as shown in picture.
