COCOA RAGI CAKE with PHIRNI TOPPING

  • RAGI
  • Atta
  • Oil
  • Powdered sugar
  • Eggs
  • Milk
  • Vanilla essence
  • Salt
  • Baking powder
  • Baking soda
  • Milk
  • Phirni
  • Dry fruits
  • Cocoa powder

Instructions

  • In a bowl, sieve the 1/2 cup ragi, 1/2 cup Atta and 2 tbsp cocoa powder .
  • In another bowl, add 1/2 cup oil and 1/2 cup powder Sugar,mix well until sugar melts completely.
  • Take 3 eggs and add egg 1 by 1 to this and beat again well until the mixture is a bit fluffy now add bowl 1/2 cup milk, 1 tsp Vanilla essence and pinch of salt, mix again.
  • Now add 1/4 of the total mix of flour at a time to this and mix using a spatula in cut and fold manner smoothly . Mix until you don’t see any traces of flour remaining and the batter is lump free.
  • Add 1 tbsp Baking powder, 1/4 tsp Baking soda and 4 tbsp milk on it and mix well.
  • Then grease the cake tin and put a parchment paper and Grease it too. In a large pan pour 1 bowl salt and put a steaming tray stand and put a lid and heat it for 5 mins on high flame. Lower the flame now.
  • Now pour the batter in the tin and now place the tin into the pan .Put in on med flame for 1 min then keep it on low flame.Wait for 40-45 min then remove the lid and check with a toothpick or knife if it comes out clean it is the sign of well baked cake.
  • Take out the cake gently after it cools down. For topping I used phirni.(I used blue color that's optional) Garnish with chopped dry fruits.
