Capsicum / bell pepper rice

Ingredients

  • Capsicum ( chopped) - 1 cup
  • Rice ( cooked ) - 1 cup
  • Mustard - 1 tsp
  • Udad dal and turmeric - 1 tsp each
  • Few curry leaves
  • Tamarind pulp- 2tbsp
  • Sugar - 1 tsp
  • Vangibath masala 2 tbsp
  • Oil - 2 tbsp
  • Salt to taste.

Instructions

  • Heat oil in a thick bottomed kadai.
  • Add mustard, udad dal and turmeric.
  • Once mustard starts splutter, add capsicum pieces.
  • Saute till soft. Mix in masala powder, sugar, tamarind pulp and salt.
  • Saute for few more minutes.
  • Add cooked rice and mix well.
  • Garnish with chopped coriander leaves.

Notes/Tips

Use green, yellow and green bell pepper to make the dish more colourful.
