If you are looking for a quick and easy munchies, then here is an easy recipe of Makhana which is quick and can be made in jiffy. This is a super healthy snack with goodness of lotus seed and jaggery. Here the caramel is made with jaggery instead of white sugar hence it is healthier. A delicious and crunchy munchies great to be served as a snacks.

Caramelized Lotus Seeds (Makhana)

Ingredients

  • 2 cups lotus seeds/makhana
  • ¼-½ cup jaggery grated
  • 2 tablespoon ghee (clarified butter)
  • 2 tablespoon roasted pumpkin seeds
  • 2 tablespoon roasted sesame seeds

Instructions

  • In a pan add the makhanas and dry roasted over low flame for about 10 mins stirring in between. The makhanas should be crisp and should easily break with crunching sound when you try to crush with your hand. Remove from heat and transfer to a bowl.
  • In the pan add the ghee. Once the ghee melts add the jaggery and stir well and let it melt over low-medium heat.
  • Once the jaggery melts completely turn off the heat and add the makhana, pumpkin seeds, sesame seeds and quickly stir them well together till the jaggery is coated well with the makhanas.
  • Remove from heat and let it cool down and serve or store in airtight container.
  • Serve as it is as munchies or serve it with tea.

Notes/Tips

You can use seeds of your choice. You can simply make plain caramel makhana by opting out the seeds. Both way taste awesome.
