- Dry roast all the ingredients one by one until they turn slightly brown. Cool, add a little water and grind into a fine paste. Heat oil and fry the red chillies, curry leaves, and bay leaves. Add the onions, tomatoes, ginger, and garlic, fry until the onions turn translucent. Add the chicken pieces and turmeric powder and cook on simmer until the chicken is half cooked. Add the masala paste and salt and stir gently for a few minutes. Add enough water and cook on medium flame until the oil separates. Add the coriander leaves to the kuzhambu and remove from fire. Serve hot with rice or rotis.
