- Heat oil in the pan over medium heat. Add onion and 1 tsp salt and sauté for 5 minutes. Add potatoes and 1 tsp salt and sauté for another 5 minutes. Add curry powder, garlic, and ginger and stir for 2 minutes.
- Add pan mixture into the slow cooker along with remaining ingredients except for kale and coconut milk. Cover and cook on high for 4 hours. Add coconut milk and kale and stir well. Cook for another 10 minutes. Serve and enjoy.
