Chickpea Kale Sweet Potato Stew

  • Chickpeas
  • Kale
  • Red bell pepper
  • Sweet potatoes
  • Curry powder
  • Fresh Ginger
  • Garlic
  • Vegetable broth
  • Tomatoes
  • Black pepper
  • Coconut Milk
  • Vegetable oil
  • Onion
  • Kosher salt

Instructions

  • Heat oil in the pan over medium heat. Add onion and 1 tsp salt and sauté for 5 minutes. Add potatoes and 1 tsp salt and sauté for another 5 minutes. Add curry powder, garlic, and ginger and stir for 2 minutes.
  • Add pan mixture into the slow cooker along with remaining ingredients except for kale and coconut milk. Cover and cook on high for 4 hours. Add coconut milk and kale and stir well. Cook for another 10 minutes. Serve and enjoy.
