Ingredients

  • Dark Compound Chocolate
  • Pineapple crush
  • Chocolate sponge
  • White compound chocolate
  • Apple Sorbet
  • Chocolate Almond cremeux
  • Oreo cookies
  • Small basil leaves

Instructions

  • Melt the dark Compound Chocolate, pour it into the half spherical mould and flip it upside down and store it in the refrefor about 20 minutes
  • Till the time chocolate is in the refrigerator.. It's time to make a chocolate sponge so bring a chocolate cake premix and bake it into the oven for 30 minutes on 180 degree Celsius.
  • After baking the chocolate sponge let it cool down and then crumble the chocolate sponge with hands.
  • Cut the pineapple into pieces, put it into the mixer Grinder or you can use pineapple crush which is available in the market.
  • Melt white compound chocolate and give it a shape of thin disc.
  • For making Apple Sorbet, In a large, resealable plastic bag or plastic container with a lid, mix apples with the juice of 1/2 lemon. Freeze for several hours or overnight.
  • In a small saucepan, bring water and sugar to a boil. Reduce heat, and simmer for 5 minutes. Remove from heat, and stir in honey. Cool completely.
  • Place apple in a blender, and liquidize them with juice of 1 lemon and the cooled sugar syrup until as smooth as possible.
  • Put it into the Freezer for 3 hours or if you want it instantly you can put it into an icecream machine.
  • Take some whipped cream mix the melted dark Compound Chocolate into the cream and turn it into a mousse and add in some crushed almonds into it. You can use mascarpone cheese too to make it more tasty and make it more smooth in texture.
  • Crush some oreo Cookies by putting it into the plastic bag
  • Then it's time to assemble every ingredient we have made. First we need to take out the chocolate spheres and make holes Into the first sphere which is going to be on the top of it it with different shapped nozzles.
  • We need to make layers now so Put on the pineapple puree/crush into the other half chocolate sphere then cover it with chocolate sponge crumbles.
  • Put on the white chocolate disc on the chocolate crumbs then add a layer of the apple sorbet into it.
  • Add chocolate almond cremeux on to the top and some oreo cookies Crumbs.
  • Garnish it with small basil leaves.

Notes/Tips

Make all the ingredients prior and do the pre preparation of every ingredients and at the end assemble all the ingredients and make layers of each ingredient.
