Panettone: Is a sweet Italian dessert, it’s a cake like bread and usually made in cylindrical shape. Main ingredients are flour, eggs, butter, orange/lemon zest, dry fruits soaked in homemade wine, tutti frutti, yeast, etc.

Ingredients

  • Flour 3 cups plus more
  • Egg 3 number
  • water 1/4 cup
  • milk 1/4 cup
  • instant yeast 2 1/4 tsp
  • butter 5 tbsp
  • sugar 1/2 cup
  • orange zest 1 tsp
  • lemon zest 1 tsp
  • vanilla extract 1 tsp
  • salt 1 tsp
  • Mixed dry fruits soaked in homemade wine 1/2 cup
  • icing sugar 1 tbsp

Instructions

  • In a small bowl, combine lukewarm water and milk(46 degrees centigrade), sprinkle active dry yeast. Let it sit for 5 minutes without disturbing.
  • Add 4 tablespoon of flour and 1teaspoon of sugar and mix it with yeast mixture. Mix well till it combine thoroughly. Cover with a cling wrap till it doubled in volume for about 30 minutes.
  • Take a bowl, add 3 eggs, sugar, vanilla, lemon zest, orange zest together and whisk well. Add the doubled yeast mixture to it and mix well.
  • Using hand mixer with dough hook attachment, add flour and salt little by little till it's well combined. Turn to medium speed and let it mix for 5 minutes. Add butter and mix till it's well incorporated. Add dry fruits soaked in wine and Tutti frutti and mix for few more seconds.
  • Dump the mixture on a floured surface and work for a minute till it's well combined. Grease a large bowl and transfer the dough mixture and sprinkle oil over the top to stop from crust formation. Cover with the cling wrap and let sit till it tripled the volume(it takes 3 to 4 hours or according to the weather conditions).
  • Grease a PANETTONE mould or any cake tin (availability of tins) with butter and set aside. Once the dough has risen, dump it on a floured surface and pull it together, place it in the mould and brush the top with melted butter. Cover again for 2 to 3 hours until tripled in volume.
  • Preheat oven to 180 degree centigrade, brush the top of the panettone with egg wash and bake it for 45 minutes or until when the skewer inserted comes out clean. Let it cool on a wire rack. Sprinkle some icing sugar on top before serving. Serve with hot coffee, hot chocolate or can have it plain.
