- Soak raisins, sultanas and tutti fruity in Brandy , RUM Or , Whisky.
- Mix the chopped nuts and candid peels , cherries and ginger with 2sp of flour and keep aside.
- Mix the butter to a cream like texture and add the brown sugar and mix it very well.
- Next add one egg at a time and blend it all together then add vanilla essence and orange juice.
- Pour the dry nuts ingredients and soaked rasins into this wet ingredients. Next swift flour, mixed spices, baking soda, baking powder , salt and coco powder into the mixture.
- Transfer the mixture into prepared cake mould and Preheat the oven before 5min. Cover the top part of cake with aluminium foil with holes poked. Finally Bake it at 170 degree for 30 to 40min
