- In a medium saucepan over medium-high heat, heat the oil and cinnamon for about a minute. Add the quinoa and stir until coated with the oil. Stir in the milk and bring the mixture to a boil.
- Reduce the heat to low so the mixture simmers and then cover the saucepan. Continue to simmer until the quinoa has absorbed all the milk. Stir in the honey and serve topped with coconut and blueberries.
