Instructions

  • finely chop the coconut on a chopping board. Add the chopped coconut in a large bowl and add 1/2 cup cold coconut milk in it along with corn flour. Mix well and keep the bowl aside. Now, place a deep-bottomed pan over medium flame, add the remaining milk in the pan and bring it to a boil. Add sugar in the pan and stir until the sugar dissolves completely, and boil the mixture for 4-5 minutes. Keep stirring the mixture at regular intervals. Next, transfer the coconut milk and corn flour mixture into the pan, and stir. Turn off the flame when done. Allow it to cool and add fresh cream. Bring a aluminium dish and pour the mixture into it. Cover the mixture with a aluminium foil and place the dish into the refrigerator. Let the mixture freeze for about 6-7 hours. Now, transfer the mixture into the blender jar and blend until you obtain a smooth form of it. Pour the mixture again into the aluminium dish and mix finely chopped coconut in it. Cover it with aluminium foil and freeze until the mixture sets. Scoop out the ice cream.ans serve.
