- Take a microwave-safe mug. Brush it with butter, oil, or ghee.
- Add 2 tsp instant coffee powder, 5 tbsp warm milk, 1 tbsp vegetable oil, ¼ tsp vanilla essence. Mix it well so the coffee gets adequately dissolved.
- Then, add 5 tbsp all-purpose flour, 3 tbsp powdered sugar, ¼ tsp baking powder, and a pinch of salt. Whisk it to form a smooth batter until no lump remains.
- Later, add ample chocolate chips to the batter and stir it. Top some more chocolate chips.
- Microwave it for about 90 seconds, and your eggless coffee cake is ready. Dust some icing sugar and garnish it with some chocolate chips.
