Ingredients

  • 50 g/ 1/4 cup unsalted butter
  • 100 g/ 1/2 cup sugar
  • 1 whole egg + 1 egg white
  • 2 teaspoons Vanilla extract
  • 120 g/ 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • Pinch salt

Instructions

  • Using a wire whisk, beat the room temperature butter until it turns pale.
  • Add powdered sugar and mix.
  • Add one whole egg and then one egg white and beat. Then add 2 teaspoons of vanilla extract.
  • Sieve and add 1 cup maida, 1/2 teaspoon baking powder, pinch of salt to the mixture and all the ingredients gently until it combines.
  • Into a piping bag, pour the batter and then pipe it like small coins.
  • Bake it in a preheated oven @ 175 degree Celsius for about 10-12 mins Bake it until the bottom portion of the coin turns brown.
