  • Coriander
  • Gram flour
  • Chopped and grinded garlic
  • Finely Chopped ginger
  • Green chillies
  • Water for grinding
  • Turmeric powder
  • Red chilli powder
  • Coriander powder
  • Cumin powder
  • Hing
  • Sugar
  • Salt
  • Water
  • Water for steaming
  • Oil

Instructions

  • Take grinder and add hinger garlic chillis.. Add water and gring to smooth paste Alternatively you can crush the garlic and ginger in mortar and pestle
  • Rinse coriander leaves very well drain the extra water and Finely chop them. You will need 2 cups of finely chopped coriander leaves
  • Take the coriander leaves in a mixing bowl Add the ginger garlic green chili paste
  • Now add the turmeric powder, cumin powder, coriander powder, hing, red chilli powder
  • Add 1 cup besan Now add sugar and salt as required (quantity Mentioned above in ingredients) Mix everything very well
  • Now add 0.5 cups of water in parts and begin to mix rhe batter
  • Mix well to a thick batter .add water as required and in parts
  • STEAMING CORIANDER POLPETTINE FRITTERS... Take a pan and grease it with oil
  • Now add the batter in the pan
  • Bring to boil 1 to 1.5 cups water in another pan
  • Lower the flame and using tongs gently keep the pan with the batter inside the pan with the water
  • Cover the lid and steam on a low to medium flame
  • Once done , check with a toothpick and it should come out clean. Whrn the mixture is cooled, gently remove the entire layer on the plate . With a butter knife loosen the edges and invert the pan on a Plate.tap the pan and unmould the layer
  • Now cut it in the square or diamond shape slices.
  • FRYING : Heat 3 tbsp oil in a tawa or a pan. Place the steamed batter and fry on the medium flame
  • When the base is golden, flip and fry the other side
  • Flip a couple times more and fry till the sides are crisp and golden. You can even deep fry it if you want
  • Place the pan fried fritters on kitchen paper towels (tissue) for extra oil to be absorbed
  • Fry the remaining in the same way
  • Serve fritters with any chutney or sauce and enjoy the yummy snacks !!
