Cream of Spinach Soup

Ingredients

  • Spinach
  • Garlic
  • Salt
  • Black pepper
  • Fresh Cream
  • Garam masala
  • Lemon

Instructions

  • Take water in a deep pan and bring it to boil.
  • Add spinach to boiling water and blach them upto 10-15 seconds
  • Keep them aside and grind to a smooth paste after it cools down.
  • Take a pan and add some butter to it. Add in finely chopped garlic and saute.
  • Add up the spinach puree to it and cook for 4-5 mins. Add 1 cup or water to it and cook till it boils.
  • Add salt and pepper according to taste. Bring to a boil and strain through a big sieve.
  • Add up the cream to the soup and bring to a boil.
  • Turn off the flame and squeeze a lemon to it. Give final mix and serve.

Notes/Tips

Take care while adding the cream and lemon, do not add them simultaneously otherwise it will curdle.
