  • Potato
  • Maida
  • Rice flour
  • Corn flour
  • Red chilli powder
  • Ginger garlic paste
  • Garam masala
  • Pepper powder
  • Baking soda
  • Oil
  • Salt
  • Water
  • Curry leaves

Instructions

  • First pressure cook baby potatoes along with salt and water for 1 whistle in medium flame. Let pressure release by itself. Prick to check if its cooked. Peel the skin,cut into half and set aside. Next add all the ingredients listed except potatoes to a mixing bowl. Mix this well first. Add water little by little. Form a slightly thickish batter. The batter should be thick just right for it to coat potatoes. Add potatoes. Mix it well. Coated well like this. Use a fork to take the potatoes as it will be sticky. Heat oil in medium flame. Once hot, add potatoes in batches. Do not flip for few seconds. Allow it to fry for few seconds then flip over and fry until golden. Once golden add curry leaves, green chillies and fry. Fry until crisp and reddish brown. Serve hot.
